Registered dietitian Andrea Mathis breaks down the best type of oats to use when making this recipe on the ‘EatingWell’ website. The difference lies in rolled oats versus quick-cooking oats.

“This textural difference not only affects the appearance of the oats, but also influences how they cook and the final consistency of your overnight oats,” she explains.
“Rolled oats are digested more slowly, resulting in a gradual rise in blood sugar levels, rather than a spike,” she continues. She notes that quick-cooking oats can become more mushy and lose their characteristic texture.
