Make These Egg Muffins For A Filling (And Delicious) Breakfast

Adding eggs to your breakfast helps ensure you get protein first thing in the morning and stay satisfied longer. Not a fan of plain eggs? Try these egg muffins with bacon, broccoli and cheese. It's an easy and delicious recipe from EatingWell.

Ingredients:
3 slices chopped bacon
2 cups chopped broccoli
4 green onions, sliced
8 large eggs
1 cup shredded cheddar cheese
½ cup nonfat milk
½ teaspoon salt
½ teaspoon ground pepper
Preparation:
1-Preheat oven to 350 degrees F. Spray a 12-cup muffin tin with cooking spray.
2- Cook bacon in a large skillet over medium heat until crisp, 4 to 5 minutes. Remove with a slotted spoon to paper towels; reserve drippings in skillet. Add broccoli and green onions to drippings; cook, stirring occasionally, until tender, about 5 minutes. Remove from heat; let cool 5 minutes.
3- Meanwhile, whisk eggs, cheese, milk, salt and pepper in a large bowl. Stir in bacon-broccoli mixture. Divide mixture evenly among prepared muffin cups.
4- Bake until set, 25 to 30 minutes. Let stand 5 minutes before removing from pan.
