Solve dinner with a quick and filling soup

For a quick and filling lunch there’s not much better than a speedy soup. Agree? This one with peas, spring onions, watercress and mint is a BBC Good Food recipe.

Ingredients:
1 knob of butter or a little olive oil
1 bunch of spring onions, chopped
3 courgettes, chopped
200g fresh or frozen peas, in their pods
900ml hot vegetable stock
85g watercress, roughly chopped
a small handful of mint
2 tbsp Greek yogurt, plus extra to serve
Method:
1- First, heat the butter or oil in a large saucepan, add the spring onions and courgettes and cook, stirring, for three minutes. Tip in the peas and stock and bring to the boil. Simmer for four minutes, then remove from the heat and stir in the watercress and mint.
2- Whizz the soup in a blender, adding the yogurt with the second batch. Pour the soup back into the pan and season to taste. Serve hot or cold, with a swirl of extra yogurt.
