Still cutting lettuce with a knife? Don't. According to Informe Brasil, the flavor and texture can change drastically.

These changes are due to oxidation. As the same publication explains, when we cut lettuce with a stainless steel knife, it triggers the release of the enzyme polyphenoloxidase, which leads to oxidation. This process not only affects the flavor and texture of the lettuce but can also decrease the quality of the dishes that contain it.

Informe Brasil also states that the best way to prevent oxidation and keep lettuce fresh is to chop it or cut the leaves with your hands.
