Yes, you read that right. You can have tacos for breakfast. Just choose the right ingredients and follow this super simple recipe from EatingWell. It's got spinach, an egg, and lots of feta cheese. Enjoy!

Ingredients:
1 teaspoon avocado oil or canola oil
1 corn tortilla
1 cup spinach
1 large egg
2 tablespoons crumbled feta cheese
Hot sauce, for serving (optional)
Instructions:
1- First, heat the oil in a small nonstick skillet over medium heat. Cook the tortilla on both sides for 1 minute. Transfer to a plate.
2- Add the spinach to the skillet. Cook, stirring, for 1 minute. Transfer to the tortilla. Sprinkle the feta in an egg-size circle in the skillet, leaving an open spot in the center. Crack the egg into the feta. Cover and cook for 2 minutes. Transfer to the tortilla and top with hot sauce.
