Ingredients:
For the salad
2 tbsp neutral-flavoured oil (optional)
4 chicken breasts, or 4 cooked chicken breasts, sliced
2 sticks celery, thinly sliced
1 lettuce, leaves separated
200g radishes, thinly sliced
1 green apple, cored and thinly sliced
1 cucumber, thinly sliced
1 large avocado, stoned, peeled and chopped
For the dressing
1 large avocado, stoned and peeled, chopped
200g Greek yogurt
15g chopped chives
15g chopped dill
15g chopped parsley
3 spring onions, finely chopped
4 tbsp rice vinegar
3 tbsp extra virgin olive oil
1 large garlic clove, crushed
1 lemon, juiced
Method:
1- If using raw chicken, heat the oil in a frying pan over a medium-high heat. Season the chicken and fry for 7-8 minutes on each side, covering for the last 5 minutes, until cooked through. Leave to rest for 10 minutes, then slice.
2- For the dressing, put the avocado, yogurt, chives, dill, parsley, spring onions, rice vinegar, olive oil, garlic and 1 tbsp lemon juice in a blender. Blitz until smooth. Season to taste, adding more lemon juice if you like. Then add cold water, 1 tbsp at a time, until the dressing is a pourable consistency.
3- Toss four tablespoons of the dressing through the chicken slices. Mix the celery, lettuce, radishes, apple and cucumber together and arrange on a serving platter. Top with the chopped avocado and as much of the remaining dressing as you like. Add the chicken. Finely grate over some lemon zest and grind over some black pepper to serve.
